Weekly Recipe: Baked Sweet Potatoes

This is one of my very favorite low prep recipes. I can just throw the potatoes in the oven and then spend 5 minutes heating up the beans and cutting up cilantro. We have it almost every other week. I got the recipe off of this website. (A lot of the recipes on the website are good, but a few are definitely losers.)


Baked Sweet Potatoes with Black Beans

4 medium sweet potatoes
15 oz can black beans
1 Tbsp olive oil
1 tsp cumin
1 tsp coriander
3/4 tsp salt
1/4 c sour cream (or plain yogurt)
1/4 c cilantro, chopped

Prick sweet potatoes with fork in several places. Bake at 425 degrees until tender, about 1 hour. When potatoes are almost done heat olive oil in small saucepan. Add beans, cumin, coriander, and salt. Stir and heat through. Remove potatoes from the oven and cut lengthwise. Top with beans, sour cream, and cilantro. (I would recommend not eating the skins, but that is just a personal preference.)
